Yields 10 guests
For the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Cocktail (makes 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Directions
For the Citrus Syrup: Combine every ingredients in a saucepan, heat until it reaches a simmer, stirring until the sugar dissolves. After that, remove from the burner and leave to reach room temperature completely. Pour to a clean bottle, cap it and refrigerate it chilled, where it will keep for up to four weeks.
Preparing the Batch Mix: Combine all the liquid ingredients into a sizeable container, leave to sit for one hour, then strain preferably using a fine cloth, to ensure it's completely strained.
When ready to serve: Pour 85ml of the batch mix into your stirring glass containing ice, gently stirring lightly for a minute until cold. Pour to a frosted cocktail glass or a similar vessel, top with the cranberries and finish by giving it a brief mist of the essential oil over the drink.
